Method

🍗 Crispy Chicken Lollipops

Step 1: Shape the Chicken (Frenching)

  • Cut the thin skin around the lower end of the drummette bone.
  • Push the meat and skin down toward the thicker joint end using the back of your knife until it forms a tight round ball ("lollipop").
  • Pull off any excess skin or cartilage at the exposed top bone.

Step 2: Marinate

  • In a bowl, combine ginger-garlic paste, soy sauce, Kashmiri red chili powder, black pepper, Szechuan sauce, vinegar, and salt.
  • Rub the marinade thoroughly onto the chicken meat.
  • Cover and rest for 20–30 minutes in the refrigerator.

Step 3: Prepare the Crisp Batter

  • Whisk the egg in a bowl.
  • Add cornstarch, all-purpose flour, and a pinch of salt/chili powder.
  • Whisk together into a thick, smooth batter that clings to the back of a spoon. Add 1–2 tablespoons of cold water if the mixture is too dry.

Step 4: Fry to Perfection

  • Heat oil in a deep vessel to 350°F (175°C) over medium-high heat.
  • Dip each chicken lollipop into the batter, ensuring the meaty ball is thoroughly coated while keeping the clean bone bare.
  • Lower gently into hot oil in batches. Do not overcrowd.
  • Fry for 6–8 minutes, turning occasionally until rich golden brown and extra crunchy.
  • Drain on a paper towel-lined plate. Option: Wrap small foil strips on the bare bones for clean handling.
