
Sri Lankan Spicy Devilled Thalapath Dry Fish Bite (Karawala Bite)
A classic Sri Lankan bar bite made with crispy deep-fried thalapath (sailfish) dry fish tossed with sweet caramelized onions, crunchy green chilies, fiery chili flakes, and a zesty squeeze of fresh lime.
Ingredients
- Thalapath (Sailfish) dry fish, cut into 1-inch cubes250 g
- Big onions, sliced thick2 large
- Green chilies, sliced lengthwise3–4
- Garlic, thinly sliced5–6 cloves
- Fresh ginger, julienned1 inch
- Fresh curry leaves2 sprigs
- Pandan leaf (Rampe)2 inch piece
- Crushed red chili flakes (Kochi / Miris kudu)2 tbsp
- Black pepper powder, freshly ground1 tsp
- Turmeric powder1/4 tsp
- Sugar1/2 tsp
- Fresh lime (juiced)1 whole
- Vegetable oil for deep-frying and sautéingAs needed

Method
Soak & Desalt: Place the dry thalapath cubes in a bowl of warm water for 15–20 minutes to draw out excess salt. Rinse thoroughly under running water 2–3 times and drain completely.
Prep for Frying: Pat the fish thoroughly dry using paper towels to prevent oil splattering. Toss lightly with turmeric powder.
Deep Fry: Heat oil in a deep frying pan over medium-high heat. Fry the fish cubes until golden brown and crispy on the outside (4–6 minutes). Drain on paper towels. Flash-fry the curry leaves and rampe for 10 seconds, then set aside.
Temper Aromatics: Heat 2 tablespoons of oil in a clean wok or skillet over medium heat. Sauté the sliced garlic and ginger for about 1 minute until fragrant.
Add Veggies & Spices: Add the sliced onions and green chilies. Sauté for 2–3 minutes until the onions turn translucent while retaining a slight crunch. Stir in the chili flakes, black pepper, and sugar, cooking for 30 seconds on low heat to bloom the spices without burning them.
Toss & Finish: Add the fried fish cubes and fried curry leaves into the pan. Toss vigorously on high heat for 1–2 minutes until everything is evenly coated. Remove from heat, drizzle fresh lime juice over the top, give it one final mix, and serve hot.
