Ingredients

  • Oyster mushrooms (or any other preferred mushroom type)

Method

Prep the Mushrooms: Wash the mushrooms well to remove dirt, and pat them dry thoroughly with paper towels or a clean cloth napkin so they caramelize properly. Tear the oyster mushrooms into smaller pieces by hand. (If using cremini or button mushrooms, slice them instead).

Prep Aromatics: Slice the green chilies lengthwise (remove seeds for less heat). Slice large garlic cloves, or leave them whole if small.

Sauté Aromatics: Heat the coconut oil in a medium pot or sauté pan over medium heat. Add the sliced onion and sauté until they start to soften. Add the green chilies, garlic, ginger, dried red chilies, and curry leaves. Sauté until the onions are translucent (do not let the garlic, onion, or ginger burn).

Toast Spices: Add the Sri Lankan curry powder, ground fennel seeds, ground cardamom, cayenne pepper, and turmeric. Sauté for about 30 seconds until fragrant, adding a generous pinch of salt.

Caramelize Mushrooms: Add the prepared mushrooms and sauté for 10 to 15 minutes, allowing them to coat evenly in the spices and develop a light caramelization.

Simmer with Coconut Milk: Pour in the coconut milk and ½ cup of water, adding another pinch of salt. Increase the heat to bring the mixture to a boil, then lower the heat to a simmer.

Concentrate Flavors: Simmer for a few minutes for a creamy sauce, or let it simmer for 10 to 15 minutes if you prefer the coconut milk to split slightly for a more concentrated, traditional flavor depth. Add an extra ¼ cup of water if you prefer more gravy.

Serve: Do a final taste test, adjust salt to taste, and serve warm with steamed or spiced rice and complementary curries.
