Ingredients

Method

Aromatics & Fresh Herbs

1 small Yellow or red onion (finely chopped)

3–4 small Green chilies or 2 serrano peppers (finely chopped; deseeded for less heat)

3–4 Fresh red chilies (optional, finely chopped for color/heat)

3 cloves Garlic (roughly chopped)

½ inch Fresh ginger (peeled & roughly chopped)

10 Fresh or dried curry leaves (finely chopped)

¼ cup Fresh cilantro / coriander leaves (finely chopped)

Seasoning & Spices

1 tsp Sri Lankan curry powder (or Garam Masala)

1 ¼ tsp Sea salt (adjust to taste)

1 pinch Hing / Asafoetida (optional, aids digestion)

Step-by-Step Instructions

1. Soak & Prep the Lentils

Rinse: Rinse the dried lentils in a sieve under cold water until the water runs completely clear.

Soak: Transfer to a large bowl, cover generously with room-temperature water (the lentils will double in size), and let soak for 1 to 2 hours.

Drain: Drain thoroughly through a sieve. Spread the lentils out on paper towels or a clean cloth napkin to absorb excess surface moisture.

2. Blend the Mixture

Reserve Whole Portion: Set aside ¼ to ⅓ of the soaked lentils in a separate bowl.

Purée the Base: Place the remaining lentils into a high-powered blender or food processor along with the chopped garlic and ginger. Blend until mostly smooth, scraping down the sides as needed.

Combine & Pulse: Add the reserved whole lentils back into the blender jug. Pulse only a few times—you want these extra lentils roughly chopped/whole to create a coarse, textured base.

Scrape the entire mixture into a large mixing bowl.

3. Season the Batter

Add the finely chopped onion, chilies, curry leaves, cilantro, curry powder, salt, and hing to the blended lentils.

Mix thoroughly until combined.

Consistency check: The mixture should feel slightly stiff and hold together when pressed into a ball.

If too wet: Line a container with paper towels, transfer the mixture inside, cover, and chill in the fridge overnight. The paper towels will absorb excess moisture.

4. Shape the Vadas

Keep your hands slightly damp with water to keep the batter from sticking.

Portion sizes:

Bite-sized (15 g): Use ~1.5 to 2 tbsp of batter.

Medium (30 g): Use ~3 to 3.5 tbsp of batter.

Roll the portion into a ball in your palms, then gently press to flatten into a disk roughly ¾ to 1 inch thick.

5. Deep Fry to Perfection

Heat vegetable oil in a deep pot over medium heat until it reaches 350°F – 375°F (175°C – 190°C). Ensure there is enough oil for the fritters to float without touching the bottom.

Carefully slide 3–4 shaped vadas into the hot oil. Do not overcrowding the pot, as this drops the oil temperature and makes the fritters soggy.

Fry time:

Small vadas: 1.5 – 2 minutes

Medium vadas: 2 – 2.5 minutes

Fry until deep golden brown on the outside and cooked completely through. Drain on paper towels and serve piping hot with green coconut chutney and hot Sri Lankan milk tea!

Essential Recipe Tips

DO NOT boil the lentils! The lentils must only be soaked raw. Boiling them breaks down the starches into a mush that won't hold shape in deep oil.

Oil Temperature Control: If the oil is too low (<325°F), the vadas will absorb excessive oil and get greasy. If too high (>385°F), the outer crust burns before the center cooks.

Make-Ahead Freezing: Fry the vadas until they are light golden brown. Cool, flash-freeze on a baking sheet, then transfer to an airtight container. Reheat directly in an air fryer or oven at 375°F until crisp and deep golden.
