The Story
Kola Kanda translates literally to "leaf porridge" (Kola = leaf, Kanda = gruel). Deeply rooted in indigenous Hela Wedakam (traditional Sri Lankan medicine) and Ayurvedic practices, it has been served for centuries as a morning ritual. Traditionally prepared in village homes and Buddhist temples, it was consumed first thing in the morning on an empty stomach to reset digestion, cool the body, and flood the system with micro-nutrients. The subtle bitterness of medicinal herbs is counterbalanced by taking a small bite of sweet, earthy jaggery right after a sip of the warm broth.
04. Method & Instructions
-
1
Cook the Rice Base
In a medium pot, combine washed rice, thin coconut milk (or water), crushed garlic, ginger, fenugreek seeds, and crushed black peppercorns. Bring to a boil, lower heat, cover, and simmer until grains are completely soft and breaking apart (about 20 minutes).
-
2
Extract the Herbal Juice
While the rice cooks, place fresh gotukola and grated coconut into a blender with a splash of water. Blend until smooth, then strain through a clean cheesecloth or fine mesh sieve to extract vibrant green juice. Discard pulp.
-
3
Combine and Simmer
Lightly mash the cooked rice for a creamy consistency. Pour in the herbal juice, stirring continuously over low heat for 1 to 2 minutes. Do not let it boil vigorously to preserve color and nutrients.
-
4
Add Coconut Milk & Season
Stir in thick coconut milk and salt to taste. Warm gently for another minute without curdling or boiling, then remove from heat.
