Sri Lankan Menari Bath – a creamy, sweet rice pudding made with coconut milk and jaggery, garnished with cashews and raisins. A traditional dessert or breakfast favorite.

Ingredients

1 cup Raw Rice
3 cups Water
1 cup Thick Coconut Milk
½ cup Jaggery (grated)
¼ tsp Cardamom Powder
A pinch of Salt
1 tbsp Cashew Nuts (optional)
1 tbsp Raisins (optional)

Method

Wash the Rice
Rinse the rice thoroughly to remove excess starch.

Cook the Rice
Add rice and water into a pot and cook on medium heat until soft and water is almost absorbed.

Add Coconut Milk and Jaggery
Pour in thick coconut milk, add grated jaggery, a pinch of salt, and cardamom powder. Stir continuously to avoid sticking.

Simmer
Cook on low heat for 5–10 minutes until the mixture becomes creamy and slightly thickened.

Add Nuts and Raisins (Optional)
Stir in cashew nuts and raisins if desired.

Serve
Serve warm or at room temperature as a sweet dessert or breakfast dish.
